Uses
Propionic acid is widely used in the food industry for the production of preservatives such as calcium propionate and sodium propionate, as well as for the production of propionate ester flavors and fragrances.
Content analysis
Take 3g of the sample (accurate to 0.1mg), put it into a 250ml flask, add 50ml of water and mix. Add a few drops of phenolphthalein test solution (TS-167) and titrate with lmol/L sodium hydroxide until a slight red color initially appears and is maintained for more than 30s. Each ml of lmol/L sodium hydroxide is equivalent to 74.08 mg of propionic acid (C3H6O2).

Use limits
FAO/WHO (1984): 3000 mg/kg for processed cheese.
